Ingredients
- 1 onion, quartered
- 1 red or green bell pepper
- 1 jalapeno chile pepper, seeded
- 1 large clove garlic
- 2 cups canned black-eyed peas, rinsed and drained
- 1 large clove garlic (Personally, I would add 3 cloves of garlic)
- 2 cups canned black-eyed peas, rinsed and drained
- 1/4 cup canola oil
- 3 tbsp white vinegar
Directions
1. Place onion, bell pepper, jalapeno pepper, and garlic in blender.
2. Process until finely chopped but not a paste.
3. Combine black-eyed peas and chopped vegetables in large bowl.
4. Add oil and vinegar and season with salt and freshly ground black pepper to taste.
5. Toss to combine.
