" Chai Kissed Peach Cobbler " Original Recipe By Trishula Eltz

My friend, Trishula, won a 2011 competition with her original recipe for her 'Chai Kissed Peach Cobbler.' It is posted here with her permission.
She is a very gifted chef currently preparing food at Whole Foods Market on Ponce in Atlanta.

** CHAI KISSED PEACH COBBLER **

* 4 cups peeled sliced peaches
* 2 cups sugar
* 1/2 cup water with 2 tsps rosewater
* 8 Tblsps melted butter or ghee
* 1 1/2 cups self rising flour
* 1 1/2 cups milk
* 2 tsps garam masala (Indian spice) or apple pie spice
* 1 tsp ground cardomon
* 1/2 cup ground pistachios (meal size)

Preheat oven to 350 degrees

Directions:
* Peel and slice peaches.
* In a sauce pan, add 1 cup sugar, peaches, water and rosewater.
* Boil for 10 minutes and remove from heat.
* In a 3 quart casserole dish, add butter and melt in oven.
* Make the batter: Mix remaining 1 cup of sugar, flour, milk and spices, until there are no lumps, and batter is smooth.
* Pour batter directly into the warm buttered casserole dish.
* Top with the peach mixture, from sauce pan, adding carefully, covering the top of the mix in casserole dish.
* Sprinkle with pistachios.
* Bake for 30 minutes or until cake springs back.
* Serve with fresh whipped cream or vanilla ice cream.
