I wanted to serve something new and unique to a friend joining us, for the first time, for dinner. Bandhu is a great cook and I wanted to treat us all to fresh picked figs, from our friend, Debra's tree.
Figo de Gallo Recipe
* In a medium bowl, cut 8-12 firm cherry tomatoes (red and yellow) in 1/4" rings.
* Cut 1 thin fresh Chile pepper into 1/4" rings, or thinner if you can. (Scissors work great for this.)
* Remove the stems from 12 fresh, ripe figs.
* Cut the figs in half, lengthwise.
* Cut each half into 1/4" thin slices.
* Add 1/4 cup of small chunks of a ripe, peeled mango.
* Lightly drizzle a tablespoon each of lemon juice and honey over mixture.
* Gently fold ingredients to blend.
* Garnish with the zest of a lemon or lime.
* Cover and chill 30 minutes before serving.
Prep time was too brief to notice.
We served this as a side salsa with grilled salmon. It will be a great compliment with any protien (or tortilla chips).
Though I didn't add any, garlic would certainly enhance all flavors, if used in moderation.
